Granola



4 cups rolled oats
1 cup unsweetened shredded coconut
1 cup slivered almonds
1 cup spelt
1 cup pumpkin seeds
1 cup sunflower seeds
½ cup honey, melted and warmed
½ cup oil
½ teaspoon vanilla
Dried fruit

Preheat oven to 325°.

Mix the oats, coconut, spelt, nuts, and seeds.

Combine honey, oil and vanilla together before mixing in thoroughly with oat mixture.

Bake for 30 minutes stirring every ten minutes.

After removing from oven, stir occasionally as it cools. When completely cool, add dried fruit and store in an air tight container.

 This recipe is adapted from a baby food book that unfortunately is long gone from my book shelf. It was a paper back of healthy recipes for babies and had a picture of a messy baby’s face. I can’t find it on the internet, but if anyone has any ideas of the name, please leave in the comments below. I’d love to know the name!
